Espirito XVI is named for the tradition of cachaca-making stretching to the 16th ("XVI") century blended with modern practices... "the spirit of sixteen," if you will. Like all cachaca, it is distinct from rum in that it is made from a base of pressed sugar cane juice as opposed to molasses.
